What do these do that my Meguiars Wax doesn't mate?

Its different types of wax for different coloured vehicles, some are hard or soft waxes dependant on your preference, some are easier to apply than others to.

People find that different waxes last longer or not etc...

It's a bit like asking why is there more than one watch available as they all tell the time lol
